Despite the AS exam not contributing towards our final A-Level grade, we're still doing the AS exam right?

Almost certainly yes unless something has changed about the A/S and A2 system recently that I'm not aware of.

You won't be able to progress to an A2 if you haven't passed the A/S, so it's not really a case of it affecting your final grade so much as being an entry requirement for the A2 year.

Depends on your school, some enter you for AS exams, some not.

I didn't take the AS, as we were taught in an order that meant we hadn't done all AS topics by the end of the first year. However we did an internal exam to determine if we scored high enough to continue to 2nd year.

Ask your school, and they'll be able to tell you

The majority of schools no longer enter students for AS.exams but some do so ask your school. The work you have studied is all relevant and will be tested as part of the A level exams but most schools consider AS exams to be an unnecessary expense and distraction from learning the material required for the full A level.
