I am thinking of deferring sitting my Scottish Highers from May 2018 to May 2019 due t o personal circumstances. Will the Universities/Medical Schools view this negatively ? (even though I will sit all my exams in a single sitting in 2019 ?

I think most would want you to sit them over a 2 year course. However, if you have extenuating circumstances you can be exempt from this. I would suggest contacting universities and asking them about it, and also having a chat to your careers adviser (or similar) about your situation to see if you would qualify for extenuating circumstances. You would then need to apply to be awarded with this, but I'm not too sure about the specifics of that.
Best of luck, and I hope everything works out for you.
