I got (x-3) and (y-1) part correct but I always get the radius^2 (k) wrong what did I do wrong? k is meant to be -7

You had it right the first time on the first line when you had the RHS as k instead of 0.

Meaning last line should be 8+k on the RHS and you want this to be 1 because there are only translations involved.

P.S. This is not the radius. It doesn't make sense to talk of the radius when you're working with a hyperbola.
