Find an area of law that you enjoy. Get a few books on it. Read them. Reflect on something law related and put that something in your P.S.

A lot of people will have extra-curriculars that highlight certain soft skills necessary for the study of law. They're often used as filler, but they could help you stand out if you're applying to one of the handful of truly competitive unis that do look at the personal statement. Bear in mind that most people who apply successfully will have some sort of tangible achievement in these ECs, not just "I went along to our debating club every Friday for a year".
