Mature student, applying to Uni, advice in "income"

Hey,
I will be effectively leaving my current employment when I start studying, doing a much reduced time-table to ensure that I am able to engage fully in full time study.
I have never completed the process before, I was just a little concerned if they wanted to see "proof" of my income because at the moment it will show a combined household income of £75k+ but obviously, when I stop work, this will drop down to £25k or so.
Will I be able to accurately reflect this in my application?

If you will be over 25 years and living with your partner, it will be your partners income that we would use to assess your Student Finance application. If you are applying in 2018/19 academic year we would require the tax year income information for 2016/17 Tax year.
