In my text book, it states that H+ ions move down their concentration gradient, into the stroma, via ATP synthase (in LD reaction of photosynthesis)

I'm aware that ATP synthase also has the role of catalysing the joining of ADP and Pi to form ATP, so does this mean that it is an enzyme that can also act as a protein channel?

Essentially the point of it is, you convert the energy from a gradient of H+ ions (the electrochemical gradient) and convert it into a useable form --> ATP. ATP synthase can also catalyse the reaction the other way around and use ATP to pump proteins against their electrochemical gradient in some situations (this does not occur in photosynthesis)

Thank you so do the H+ ions actually flow through the ATP synthase in this case? (as well as the catalysis of the reaction)

Yes ATP synthase has a transmembrane regions which contains a proton channel. Movement of protons through that channel drive rotation of a subunit in the ATP synthase. Rotation causes fusion of ADP + Pi ... in a very simplified overview!
