Hi - is anyone doing Castles in their GCSE History? What do you think will come up and where do I get the best resources? Love history but not sure on this subject ( or why even!)

Yes best to revise about the Normans. They effectively created the stone castle as we know it. Motte and bailey castles etc from which most castles were derived. A huge proportion of British castles that exist today have Norman origins.
