Is it possible to study medicine at university with these A levels - chemistry, biology, sociology and psychology?

Yes, those subjects are fine. You need to do biology, chemistry, and another subject which you enjoy and can get an A in. You don't need to take four subjects and you might even jeopardise your chances of getting AAA if you spread yourself too thin.

I've heard the term AAA lots of times, does it just mean the grades that you have to get?

A*A*A would be optimal for medicine, and then dont forget the other spectrum, crafting a personal statement that explains why you would make a great doctor.
