On Liberty - Mill
Communist Manifesto - Marx & Engels
The Prince - Machiavelli
Social Contract - Rousseau

Some more modern/introductory additions:
Any 'Very Short Introduction' that is related (OUP)
Philosophy: The Basics - Nigel Warburton
The Undercover Economist - Tim Harford
An Introduction to Political Philosophy - Jonathan Wolff (This is the only one I haven't read, but I'm going to and everyone else seems to like it)

I hope to do a PPE too.. I've arranged two weeks of work experience with a local MP, she used to be Health Minister :wink:, and most of that is in her constituency office, and then one day shadowing her, and another in the Westminister office!

I'm also shadowing a magistrate for a day as well.

for the economics side. work experience isn't crucial to show interest.
u could participate in economics essay competitions (look out for the "young economist of the year" one). and perhaps get involved in Target 2.0...
or if your discussing Globalisation/trade issues in relation to economics in your PS, you could volunteer for a local charity or NGO dealing in that area. i.e TRAIDCRAFT....

If so did you put anything specific that you could do for her or did you just ask for work experience?
