Maybe they cook them in special oil.
i dont know, i think they use either maris piper or king edwards.

but maybe its the taste of the oil you cant replicate, i mean obviously they buy some sort that you can't buy retail...
I really don't like chip shop chips - too soggy and greasy. :eek:

I prefer McDonalds' chips - way nicer! :biggrin:

I bought some chips from the chip ship and they were very good.
But why do are the chips I make myself (fresh cut from potatoes) never taste the same (as good) as the ones from the chip shop?
I mean they are cooked in the same way ffs. :hmmmm:

Try frying them in dripping!

Or try Blumenthal's thrice cooked chips. Boil them until they lose resistance when you put a knife into them. Then rinse then off and let them cool. Then put into a deep fat fryer at 110 degrees C until they turn whiteish and look slightly dry. Remove and let them cool down again. Then fry at 170-190 degree until crisp and golden on the outside. Guaranteed to give crispy fluffy chips!

BTW perhaps the reason they taste sligtly diff is because there is batter/fish remnants in the oil?

I think boiling them first is a great idea.
Maybe because you aren't frying them in a tub of lard.

Best chips shop chips for me is at whitby...quite predictable really.

I get what you mean though, some chips in the oven don't taste nice at all.

The chips I make are as good if not better than chip shop chips, maybe you're just rubbish at making chips. :p: :biggrin:

Well that's put me off chip shop chips for life, especially with mayonnaise on them. :s-smilie:

all the fast food outlet fries are terrible.

the only time i prefer fries to English style chips is in Belgium. their fries are nice.

they sometimes have the beef stew stuff on top of them, the name of which I can't remember but its great! or with mayo on top (although i would never have mayo on top of English style chips! just frites)

They use different oil and get the oil hotter than you can at home. They also have potato-chippers, to get them that particular chippy thickness and shape.

You'd think but apart from Harry Ramsdens, these days it's all vegetable oil. And that's why his chips are the best in creation. God didn't just spunk over them he knighted Harry, and then gave him a few saches of spunk to make them perfect.

Nah, all the small shops still use fat. Only the ones that are trying to be "nice" use oil.
