Maths and further maths will help you with Econ or Engineering or financial degrees.
Two sciences will also open up engineering.
What you need to do is check a variety of unis and courses and look at the entrance requirements to get an idea of what subjects they want.
If its a case of whether to do econ or chem, then I would try and id what your chosen subject area is, consider if you want to do a science degree and id which one you can get the best grade in or have most interest with. Also if you intend to do either at A level.
If its econ you want then either will be fine and I would go for the 3 or 4 you can get the best grade in.

From my personal experience, chemistry is less demanding than economics, but if you want to do economics at univeristy, I highly suggest that you do economics so that you get used to essay wriitng, and to make the transition between A-level and univeristy easier.
