I have an illness and I have been told recently that the professionals don't think my health will be stable enough to go to university am I able to apply to university and defer if I get offered a place? (mental health nursing).

Unfortunately it's unlikely. The best thing to do would be to contact universities you may be interested in, but it's likely they will just tell you to apply when you are able to attend. This is due to the process for DBS checks, occupational health and interviews, where they really need current information.
