Health Professions is used to describe the 'Allied Health Professions' in the NHS, these can be found here.
The most popular are Midwifery, Nursing, Radiography, Physiotherapy, and Paramedic.
The name of the access course doesn't mean as much as the units studied. For example, I studied an Access to HE: Science diploma, which was identical to the Health Professions diploma.
If you get good grades and aim your personal statement at that course, I'm certain you can do Psychology, or Physical Activity Health and Exercise, providing it contains the necessary units. My course had exercise units in the biology modules, and psychology units.
