Which subjects should I never choose for my IB course?

it depends what course you want to study at uni [look at subject requirements on websites] and what you prefer in a subject/course
genreal advice from my me and my ib friends:
- maths hl is notoriously the hardest ib subject, its doable but incredibly difficult
- history hl has tons of content so an aptitude for memorisation is key
- if you dont really like essays avoid english lit [do lit lang] instead
- physics is probably the conceptually the hardest science so unless you want to do engineering or something i wouldn't go there

As above, HL Maths and Physics would be required for the vast majority of engineering courses (and HL Maths for pretty much all of them). Taking your group 6 subject as a second science might be a good idea if you're inclined towards STEM areas generally, but this isn't strictly necessary (you may find some engineering courses require a third STEM subject at HL/A-level, and might give you more options in the STEM realm, depending on what you take).

For your other subjects, pick whatever you are best and/or find most interesting/motivating; universities won't really care about what your SL subjects are, especially if they're all in humanities/social science areas and you're applying to engineering (although you still need to take them, and usually get some minimum grade in them each and they do contribute to your overall mark of course).
