Hello,
I'm looking at different universities and some aspirational ones require a B/6 - GCSE maths but I only got a 5. Will this affect me significantly when applying to the uni's?

It will because you haven't achieved the minimum expected grade for the particular university so they will not consider your application because of the lower grade than what they're after

It would be risky to apply to them and advisable to email first and ask whether they would still consider you if you apply with a grade 5 in Maths. Make sure that most of your choices explicitly state that they accept applicants with a 5.
