I have been working on my (law) essay for the last 5 days. Am I spending too much time on this or should I spend more?
And yes it’s an assessment piece.

It’s not that bad, but I always think that writing the essay is the easy bit - it’s the rest that’s hard

Spend however much time you need on it. There really is no set (time) limit.

For law, which might take more time than other subjects to conduct research, I might spend 2 weeks on a 3k essay.

You have to be careful not to scoop up too much info, mind.
