I’ve made flashcards from the content in these books.
Do you have any tips on what I can do to get 9s because I’m struggling to funnel out the info that is ACTUALLY needed in them,
I.E they mentioned Callose and that’s not even on the “include” part of the spec so why would they include it ?

I don't think so. Textbooks? Maybe.
CGP Revision Guides include information on the spec. and extra information which can help you in later advanced learning. Only focus on the core information that they give you (things to do with the spec.) and leave the extra information until later, if it suddenly comes up as an extra triple topic to learn.
They must have for some of my peers who did make the grade (although I assume that CGP was their main revision resource with this statement).

If you're in doubt, look at the specification.
Doing past papers and practice questions is a good way of figuring out what you actually need to know.
