Could I get into Cambridge for history with a 5 in maths but with all of my other subjects being 8's and 9's?

Honestly no. Oxbridge care way too much about GCSEs and they only accept the best of the best

GCSEs don't matter as much as you seem to think...
Basically: no, getting a 5 (in an irrelevant subject to that course!) won't doom an application to Cambridge for history, but excellent GCSEs don't guarantee anything either.

I’d strongly consider retaking your Math, Cambridge say they only require a pass but if you have a look at their acceptance data you’ll see mostly all the students have A-A* on their back in Math.

Statistically yes, most students have ALL A*s and As. But 1 C out of all A*s (8s and 9s) is far from bad. OP, are you sitting your GCSEs this year or are you in year 12?

It depends on the subject. In the context of a medical application that 5 would look pretty bad. But in the context of an English applicant with all A*'s at GCSE/A Level bar one 5 in maths, I think your chances will be the same as anyone else and primarily down to the tests/interviews.
