Do i need to learn all the quark structures of all the mesons e.g. K+ or is it just the baryons e.g proton, neutron. And do i need to know quark structure of leptons or not?

This seems a bit confused - leptons are not made of quarks.
For Edexcel at least you don't need to know anything more than that baryons are quark triplets (with their antimatter equivalents being antiquark triplets) and mesons are quark-antiquark pairs. You are even often given the charges of each quark, though it won't hurt knowing a down quark has charge -1/3 and an up quark has charge +2/3.
