When you put the vaporised sample into the mass spectrometer, the atoms/molecules will get ionised, accelerated and then deflected. When ions are being deflected, depending on its mass/charge ratio, some will be deflected more than others. When they are deflected, some of the ions will collide with the walls of the mass spec and pick up electrons and be neutralised however others with the CORRECT M/Z RATIO pass through the slit and are detected. What I don't understand is what is the "CORRECT M/Z RATIO" and why don't we just alter the magnetic field to gather all the ions in the sample?? HELP

"Correct" simply means that these ions are brought into focus at the detector, i.e. they arrive there.

We do. That's how MS works.
