I sent out an email a week back and it says now "Microsoft Exchange Approval-message expired"

Why does this come up? Is it maybe because it was sent during a week off?

Does this mean the recipient has not got my email so I have to send it again??

Thank you

I've never experienced this problem...try sending an email to a friend and see if they receive it even with the message popping up again. Then you know it's not an issue. If not, contact Microsoft here.
