So I know the automatic answer to this is 'not at all' but hear me out. I got an offer for Psychology- 34 overall, 655 at HL, and a 6 in Math SL. Based on how the exams are going, I'm expecting a 39 overall, 776 at HL, and a 5 in Math SL. Is one mark lower in the math category going to make or break my condition?

Probably not, but that is worthless because its completely in their discretion and it will depend how many make the offer that year. Speak to admissions and dont lose hope until they say so.
