I want to apply to study economics and economic history here and need to start writing my personal statement.

what sorts of things would I write about to make a strong application to LSE?

The same as with any other uni. You need to talk about why this course and how you have developed your academic interests in the subject. You can have a short extra curriculars para focusing on relevant skills gained but the majority of your statement should be about your interest in the subject.

over this summer I am going to be taking part in two summer schools to do with economics as well as accounting work experience.

Is this relevant to the extra curricular part of statment or is that related to my degree as it would show my academic interest in economics?

Math is definately my favourite A-level it does take a while for me to fully understand it but after a few practices I get the grasp of it especially doing lots of papers!

how about you?

and how do you find economics as an a-level?

You have to be able to explain how they developed your interest ie what you did or learnt through your reading and experience. Just attending the summer schools isn’t enough. We have a free review service on here which can help. You can read more about it in the thread at the top of this forum.
