My uni offer specify that I achieve a B in Maths. If I was to miss this target, say I get a C, how likely is it that I would be accepted anyway?

Usually depends on the university and how other applicants did etc.

unlikely this is a critical subject requirement for a Maths based subject. Any other subject they might accept dropped grades but as this is critical I suspect you will be rejected.
