Swift Polling helps to create multiple choice questions and quizzes in advance. It is a very convenient tool because students are able to use their devices and vote with their phones which brings their attention back. In the end of the quiz students will be able to see results on the screen.
Nearpod and Kahoot are my go to for engagement. Otherwise, I use a timer on the whiteboard as an attention grabber/management tool. Random name selector is good for engagement too.
