If a teaching assistant leaves work on last day of Summer term and puts August 31st will that guarantee payment for August? School holidays start end of July.
How does this work?

you'd specifically have to give notice on that date in august i believe.

You should get paid for August as TAs are only paid for the hours that they work, however, your hours are added and then divided by 12 for the 12 months. So technically you’re not getting paid in August ‘for doing nothing’ as it’s money already divided from the hours you’ve worked in the year.

This is obviously dependent on your contract type and the terms you work under / could be different at an independent school.

Clarify with your SBM for your school’s specific details.
