I currently study chemical engineering with biotechonology, I’m just concerned that the “with biotechnology” aspect will mean that employers in fields such as oil/gas and nucleur wouldn’t want to employ me, leaving me with just bio roles. I want to keep my career options open. Do you think this is true or am I just thinking too much into it?

Having a "with..." generally doesn't make a difference to employers outside of that "with..." field, who may see it as being at least somewhat useful.
