I do want to enter an epi field while keeping my options open for a potential PhD in the future (UK) but I just cannot seem to decide between the two courses.
Looking between them, i've come up with a list of pros and cons for each:https://www.lshtm.ac.uk/study/masters/demography-healthPros:- More courses directly related to epi- A lot of flexibility to take courses from Spatial Epi to Advanced Stats in Epi- Good brandnameCons:- The name doesn't seem to focus on epi- Still forced to ensure that two of my module choices are 'demography' related- Less interested in this as my bigger interest is in communicable diseaseshttps://www.lshtm.ac.uk/study/masters/one-healthPros:- More related to my area of interest (infectious diseases)- Course seems to be really unique and being a joint course with the Royal Vet College, seems to offer a unique experience- Project work with the option to travel sounds funCons:- Less 'epi' focused modules- Focus of the course seems to be more spread out- Worried I won't get enough hard skills as in the Demography & Health CourseI really am lost right now and need to make a decision by this week. Does anyone have any insight or experience with either of these courses/institutions?

It is a difficult one. Brand name means nothing and the name of the course means little as people will focus more on what you studied and your experience. I would say go with your interests and experience always helps so it sounds like the one health course is more for you. Have/can you visit? Maybe talk to the course director about your concerns?
