Does the royal vet school of Edinburgh and Glasgow vet school accept OU qualifications? And how do you get in?

You may need to contact the unis directly to confirm if they would accept your exact qualifications, but this guide covers the standard entry requirements for all UK Vet schools.

Vet med is obviously a competitive course, so even if you meet the minimum requirements, you aren't guaranteed a place.

I’m pretty sure they don’t. I start at Glasgow uni in September and got my grades via an access course. I don’t remember seeing anywhere about OU grades though.
