So i have a offer from southampton to do medicine and I am thinking about deferring my entry to 2020, if i were to decide i do not want the offer and want to apply to something else for 2020, could I do this in the next couple of months? I wouldn't be applying through my school so how would UCAS work?

You can register independently on UCAS. You need to arrange your reference - can still be your previous teacher if they are happy to or an employer if you have work lined up this year.
Have you spoken to Southampton about deferring? That's the first thing to do.

You are taking a gap year in 2020 right? You can’t apply now because the application process is over for the year (though you can go into clearing) so you need to apply in October or December of 2020 for the 2021 entry

Oh yeah, sorry, I’m getting confused with the a level results coming in. Yeah, you’re right. You can apply this year. Either the early entry or the normal
