physics, maths and psychology. is this a weird combination and what degrees can i do with it? where can it take me?

No - it's not weird - maths and physics go together very well and maths and Psychology do too as Psychology has a lot of statistics in it. You are keeping your option open for engineering type degrees and as well as those linked with Psychology. 40% of graduate jobs do not specify a discipline.
