Does anyone now if its possible to make Good pastry with wholemeal flour?

I tend to make pastry (and jam and custard) at home as a) you know whats in it, thus better control of ingredients; and b) because its healthier than store brought varieties (my puff pastry for example has about 47-52% fat of the store brought vegan varieties / 31-37% fat of buttery varieties).

Whilst I like making pastry, 1 problem ive noted is the use of white flour, which as any nutritionist will tell you is not great for your health. Does anyone know if it is possible to make filo or puff pastry with wholemeal flour?

You can use half and half quite successfully, apparently.

I suspect that using wholemeal flour on its own would give a very heavy, cakey result, not what you want for puff pastry.
