I currently do psychology, economics, biology and chemistry AS Level (just started) and feel like this would be too much work and I'll get too stressed out, so i was thinking of dropping psychology and do an EPQ instead. Is that a good idea?

If you are stressed, go for it! Unis dont care if you do 3 or 4 subjects, so if you think you will be happier, go for it. Last year, I dropped German in October and I am very glad I did. I think my grades would have been less good had I not dropped German.

Your subjects seem pretty hard as well, so I would consider it
