This one's technically not part of the soundtrack per se, but it does get used in the menu music for Blood and Wine.
I also like how it doesn't all sound alike. You have the Slavic folk music inspired stuff and you have more conventional music.
Skyrim's pretty nice too, though some of the exploration music can get a bit repetitive after a while. My personal favorite:
I'd also put DA: Origins up there simply for the main theme, which probably remains one of my favorite pieces of music in general.
