I’ve read that you should avoid using shampoo that has harsh ingredients like sulfate in it.

This site is a really good resource for understanding the whole concept of the 'curly girl method' which is where the whole idea of needing to use certain products come from. https://www.naturallycurly.com/
They have lists of products and methods for caring for curly/kinky hair. I'd start by diagnosing your hair type, and then searching for bloggers/bloggers with similar hair types. I can't really recommend one product, because something my hair loves yours might hate. It's just trial and error. I started with the list above, and started at the cheapest and just kept trying new products till I found something I liked

i have black afro hair and i use whatever

you could get cantu shea butter shampoo and conditioner. very moisturising for my afro hair
