Which is better:

Electric guitar
Acoustic guitar
Electro-acoustic guitar
Electro-classical guitar
Classical guitar

Which of the above is the quietest? (Very conscious of hurting people’s ears).

Don't worry about hurting people's ears, it's not as if you're learning the violin
Classical and acoustic guitars are quiet - there's no way you could put on a performance without a microphone - but you could also get some headphones that plug into the output socket of an electric so you don't need an amp

An electric is quieter than any acoustic when it's not plugged in. I never plug in at home

classical uses nylon strings so is noticeably softer in tone. the major difference is in shape and fretboard width, with classicals being smaller and wider respectively

I also volunteer at a local guitar summer camp over the summer

Learning a new piece... and it can be frustrating hearing just how good it can sound in comparison to your own performance.
