I’m wondering whether digitally taking notes on GoodNotes with an Apple Pencil would be a good idea for GSCEs? I’m taking Separate Science, so notes are gonna be quite important and I’m slow at writing on paper

Hi! Absolutely! If it works for you go for it, uni students use goodnotes so why not for GCSE? It makes carrying around notes super simple. Just make sure you practise answering exam questions on paper every now and again so you have a feel for the exam and can work on improving your speed.
nothing wrong with making digital notes, if that's how you work best then go for it
