I graduated last from Exeter with a 2:1 in Physics with Astrophysics, and I'm very interested in working in F1. What sort of roles could I apply for with this? I don't have the exact degree they're often looking for...

I 'm not really sure you can really correlate Formula 1 with Astrophysics, like what Rock Fan said, maybe some designing could work with Astrophysics, but degrees I would associate with Formula 1 would be like Aerodynamic Engineering, CompSci. Best way to see is to just apply to roles and see what happens
