It can be either, unis that go by University of ... , use the shortcut UoX.

Both Sussex & Southampton are Unis of's hence are both UoS

(as apposed to: ZZZ University such as: Loughborough University, which does not use this acronym)

If you type 'UOS' into Google, the first university on the results list is the University of Suffolk. However, Google also says that it could stand for 'Union of Students', which isn't a university at all.

Can you tell the context in which you saw this acronym used?

Swansea is Swansea University, so probably not that.
University of Surrey?

Is this a course you have seen, with reference to it being 'available at UOS', or something?
