I don't really enjoy the sciences and I am much more orientated towards humanities e.g. economics, history, business etc.
Although I've already selected CS for my science subject (SL) my friends tell me how hard taking Comp sci is, especially when ive had no prior CS knowledge in IGCSE. I currently take IGCSE physics, but oftentimes I struggle because of the lack of taste for this field. I was hoping if there have been cases where it was possible for people to drop sciences altogether and take 3 humanities?

Nope, sorry :\ You have to take either 2 humanities and 1 science or 2 sciences and 1 humanities. No other way around it
A lot of my friends who aren't into the sciences choose to take Biology at SL and they seem to be doing fine
