Anatomical pathology is quite specialised, where a technician may likely be expected to have a bachelors degree unlike say a machining technician. A level 3 would most likely be a broader subject which involves using standard equipment to provide data to technicians, with specialising coming further along in education.

You may want to look at broader alternative medical and biology related L3 apprenticeships/college subject, or take associated A-Levels. After which, you can then keep a look out for associated higher and degree apprenticeships, or go to university full time.
