Most archaeology degrees allow you to switch at some point depending on your interests, but you'd have to check with the department for this. Have a look at the modules you'd be taking in second or third year, as this is when the degrees differ a lot more.

I do BSc archaeology at a different university (you need a science a level at my uni & have different comp/core modules) and quickly looked up Sheffield’s modules it seems that a few of the compulsory/core modules are different for the BA/BSc. (So you may want tk look at the modules more in depths & work out which you prefer).
