You haven't included the whole question here which makes it difficult to help you.

"metals like sodium chloriden"

Sodium is a metal. Sodium chloride is a compound formed when Sodium reacts with Chlorine, which is a non-metal.

The metallic or non-metallic character of elements (substances where the atoms are all of the same type) ultimately comes from the structure of electron shells round each atom's nucleus, and (so) whether the atoms tend to gain or lose electrons.

Metals have relatively loose outer electrons which they might lose. That relates to the typical properties of metals: shininess, being able to conduct electricity, etc and what they react with. Non-metals tend to gain electrons (to 'complete their outer shell' is said a lot at GCSE) when reacting to form compounds.
