Mental health nursing or psychology degree?

What’s the difference between them two? Which ones have better career opportunities after graduating, employment rates, salary pros and cons?
They are very different, do your own research online, there's far too much to cover than what I can post here!
A good starting point would be to realise that a psychology degree DOESN'T make you a psychologists. Arguably it's easier to get a place to study medicine than become a psychologists.
Go do your research into that, and decide if a psychology degree still sounds interesting.

Mental health nurses are in massive demand. You qualify, you are basically guaranteed a job. Also consider that student mental health nurses recieve a minimum of £6000 funding per year.

Look at pay difference. They are massive. However, there are ways, as a mental health nurse of boosting your pay. The pay in prisons is good. You can also go into management.

Most mental health nurses will tell you that their training schemes are lousy.

Research the actual difference in job roles--they are huge.

Finally, if I've put you off, have a look into, occupational therapy degrees and dietetics degrees (Not nutrition).
