I have a pathological hatred of that mushy, 'mild cheddar' that literally tastes of nothing. I think it's cheese for people who dont like cheese.
I like a strong, sharp cheddar with a bit of a crumbly texture.

I usually get my cheese from Sainsburys, who classify cheddar from 1 (mild) to 5 (extra mature), and whilst I like the taste of 5, I generally find it too crumbly to slice well, so I go for 4 as the best overall; but keep trying 5 now and again in the hope the texture's improved.

For me anyway,I don’t really taste anything in just pesto pasta,adding that extra bit of cheese really brings out the flavour x
