Uses mathematics and modelling to theorise the existence of phenomena: matter/dimensions etc. that may exist, but has no empirical evidence to directly prove existence. For instance, Higgs boson's, black holes, anti-matter etc. were all mathematically theorised to exist long before they were observed.

Experimental physicists attempt to prove or refute the predictions of theoretical physicists by observational measurement, repeatably, reliably and accurately, through experimentation.

If you mean to ask "what kind of jobs involve theoretical physics", it's... research.
