I'm a bit like you. I'm very particular about hygeine especially around food, and it worries me that in a month's time I could be living with 5 slobs. Obviously there are some things you shouldn't do eg you shouldn't stick post it notes everywhere telling people to be cleaner, that will not go down well. I reckon as well, I'm going to have to turn a blind eye to what others are doing if it's not affecting me, even if it really disgusts me. In short, if it doesn't bother me, I won't care.
Though I'm sure if something does actually bother you, as in someone's getting into your space or using your things without permission, I reckon most mature people will get the message after a nice polite talk with them. You will get to know your flatmates outside of the kitchen so the chances are you will end up friends, and friends can usually get the message if they're bothering eachother
Other than that I'm as worried as you.

I lived with strangers last year and I'm clean. I can tell you it really is no big deal, I had my own bathroom and fridge but I just got used to their messy ways :-). OP try not to worry too much as they are probably feeling the same way as you. If they are messy, it doesn't mean you can't get on with them, for me it became a source of humour-it never annoyed me. If you find you can't get on with them, don't worry. You don't HAVE to be friends with your flatmates :-)
