I have a month to do 2 university level essays, one is 3000 words and the other is 2500 words.
Do you think it’s possible to get around 50/60 percent in both of these essays bearing in mind that I’ve completely forgot most of what I learned in the modules that these essays are for.
So I would pretty much be doing 2 essays with little knowledge of the topics?
Does anyone have any good planning techniques etc for someone in my situation??

Id suggest planning each essay, break it down into paragraphs and what youll talk about in each one, from there you can add detail to the plan eg researchers or theories or whatever, going through notes or books to do this should be easy and might help you remember things as you start to 're-learn' about them,
from there you can type the draft up into an actual essay

i honestly dont have a clue what grade youll get, but id say re-read everything first, even a quick scan read, make quick summaries might help? note key ideas?
