What should I do

Hi! I am an EU student currently on a gap year. I have applied for 5 universities, but got accepted only in my safe choice, however I've realised that I don't actually want to go there.
I want to reapply to a better uni next year, please suggest what would be a better strategy for getting in.

I have 2 options:

1. Go to my safe choice uni and try to reapply next year (My logic here is that my university grades may substitute for my school marks)
2. Since I will be considered a mature student if I apply for 2021 my school grades may be considered less important, so I thought about not going to uni this year and instead focus on work (find an internship or start my own project).

Currently I'm leaning towards starting uni and at the same time trying to do something intresting in terms of work experience to make my application stronger.

Thank you in advance for all your suggestions!
I would go now, while you can still pay the lower tuition fees. If you apply next year, you will be considered an international students and the fees will be ridiculous.
