That sounds lush, I'll have to give it a look, and maybe add that particular recipe to the list too!

:O this is good news lol - I thought cream ones werent vegan

Ooo, this sounds lush (and healthy!?) I'll add it to the recipe list as tried and tested, and hopefully give this a go myself too. I have some sweet potatoes kicking around as well!

Ooo thank you. Sounds tricky, I'll have to give it a try

:O Oh my god! This gives me life! I'm gunna try this - I'll add all these recipes to the list guys

Temps need a bit of experimentation. Use the “shove a toothpick and if it comes out clean it’s done” method. Last time I made it I baked at 190’ for 20 mins.

also for anyone into baking, I saw someone on ig use Alpro yoghurt (like the chocolate pots for brownies) as an egg substitute when baking - I haven't tried It yet but I'll report back when I do!

I use this as egg replacer. https://www.planetorganic.com/orgran-egg-replacer-200g-200g/12855/?gclid=CjwKCAjwlID8BRAFEiwAnUoK1XU1ewZPrilZpsKo-JvDRwbqzQ1r5NAUYCAk8H9dklsVUF4fvOyqyRoC22AQAvD_BwE

PS: @nursingstudentuk this thread seems to have been taken over by random recipe related chat. Partly my fault for replying to questions, partly others.

How about putting on orig post to “tag me” if you want recipe added to first post? Else they’ll be dotted all over the place. Need some kind of method so all recipes are in one easily accessible place, like a single post with spoilers or something. What’re your thoughts? Or am I over thinking this?

That sounds fine! Honestly, I'm glad to see recipe related chat lol. It doesnt bother me - I'll add a little warning asking people to tag me in recipes, that should help. No worries

Do share if you make any pumpkin recipes!!

I think I've decided I want to try and make a "pumpkin mac n cheese" https://minimalistbaker.com/vegan-pumpkin-mac-n-cheese/
and a pumpkin spiced latte.https://wholefully.com/vegan-pumpkin-spice-latte/
I've separated the pumpkin flesh from the seeds/strings (although I've heard you can roast the seeds ). Today I'm going to cook/blend the flesh to make a pumpkin puree, then I'll be able to make most pumpkin recipes it seems (although many say you can use canned pumpkin too - never seen this is store though)

Although... all the recipes seem to use a dash of "pumpkin pie spice"... maybe this is an american thing or im blind but I've never seen it before! So I'm going to try and make my own, (just needs ground cinnamon, ground cloves, ground ginger, ground nutmeg and allspice)
I also need to buy some coffee for that latte though https://www.livewellbakeoften.com/homemade-pumpkin-pie-spice/
Wish me luck, I've never cooked pumpkin before either, but I'm curious lol

Good luck! Let me know how you get on! Today I baked biscoffs, orange and cranberry muffins, and my pièce de résistance: Vegan Cheesecake  (minimalist baker one) - pics of the cheesecake to follow tomorrow

omg that sounds exciting! What we can do with a day off, eh?
Well I couldnt find any allspice or ground nutmeg in sainsburys (curses!), but I'll press on without and let you know how it goes

my mum bought a bag of whole nutmegs from an indian wholefood shop...then we grated it on a small cheese grater - works a charm! No idea what on earth "allspice" is. Sounds like some made up white man thing haha

Thanks for that tip! They actually had whole nutmeg there, so I may have to try that. As for the allspice, I thought the exact same thing: "gee that sounds like a copout, like a bunch of spices all in one so you dont have to think about it", but it appears to be this:

Spoiler

I'm sure I hear of allspice everywhere, but cant seem to find it :/
Also, even without nutmeg/allspice, the spiced pumpkin latte was the MOST DELICIOUS THING I've ever drank. Oh my god  even my boyfriend loved it. Will defo be making again, and maybe I'll add a "drinks" section  Or perhaps it belongs in desserts? It was that yummy to be honest! Sorry, this is the only picture of it I have:

Spoiler

I also put the leftover puree into the freezer  (and bought two more pumpkins, - proper cooking ones so hopefully they will be sweeter)

Honestly, last night I made some ravioli and it made me want to puke. I used store bought ravioli, which was delicious but like £3 so I'm never buying it again, however I made my own sauce and I literally had to bin it half-way through, I have no idea what went wrong :frown:

Sounds like aubergine! (Aubergine has bad connotations for me so when someone talks about bad food, I think aubergine subconsciously!)

oh no... really? I quite like aubergine! Oddly I think it can make meals quite sloppy, especially it turns my lovely bright orange soups a dingy brown, but grilled or fried on its own I like it as a snack. I tend not to mix it with anything else though  I can see why you'd dislike it. Do you hate courgette also then?
